  • Description:  Chef Greeley will discuss:

  1. Differences between Swiss, Italian and French meringue buttercream and American buttercream
  2. Demonstrate how to make a creamy, smooth and delicious buttercream  
  3. How to make simple syrup to keep cakes moist
  4. How to bake a great cake
  5. How to stack cakes

Students will:

  1. Learn to level a 6 inch vanilla cake, how to torte it, add simple syrup, filling between layers and icing the cake smooth with a spatula
  2. Learn to color buttercream with edible colors
  3. Learn how to fill and use a piping bag
  4. How to add depth and color to any decoration using piping bags stripping techniques
  5. Basic piping techniques to make buttercream decorations
  6. How to pipe lines and make simple borders and letters

  3. Students please bring a container to take your project home.  Cake board is 8 inches in diameter

Royal Icing 101

Price: $60

  • Level:  All skill levels welcome.  Teens and adults
  • Tools/Materials: All tools and materials are included
  • Description:  Students will learn:

  1. How to make royal icing to decorate cookies, cupcakes and cakes
  2. How to achieve different consistencies of royal icing
  3. How to color royal icing 
  4. Use of edible powder colors versus edible gel colors
  5. How to transfer a design onto a cookie
  6. Basic piping techniques
  7. Basic painting techniques
  8. Flooding technique

Chef Greeley will also share her sugar cookie recipe and discuss proper ways to bake sugar cookies

Piping 101

Price: $65

  • Tools/Materials: All tools and materials are included
  • Description:  Students will learn to:

  1. Fill and use a decorating bag
  2. Ice and decorate cupcakes
  3. Pipe lines and make simple borders and letters
  4. Pipe petals, ruffles, ribbon rose, star drop flowers, swirl drop flower, 2D swirl, leaves, sunflowers and rosettes
